Eggless Vanilla Cake

This is a simple yet yummy cake among various cakes I have made so far. The original recipe was shared by our neighbor aunty Vibha Shirali. 
Everyone at our home including my kid love this cake, I make it in small quantity almost for every 15 days !


Ingredients :
All purpose flour (maida) - 2 cups
Sugar - 1 cup
Milk powder - 1 cup
Milk - 1 cup
Butter - 1 cup
Baking powder - 1 tsp
Baking soda - 1/4 tsp
Vanilla essence - 1/4 tsp

Preparation :
1. Make the sugar powder in a mixi.
2. Sieve together maida, milk powder, baking powder and baking soda. Repeat the process and keep this mixture aside.
3. In a large bowl, add butter and sugar powder. Beat this mixture for 5 minutes with the help of a beater.
4. Add the sieved mix and milk little by little and beat the mixture continuously. Continue to beat for 5 minutes until it mixes well without leaving lumps.
6. Grease the cake tin with butter and sprinkle 1 tsp maida.


Procedure : 
1. Heat the wide cooker and add 1 cup table salt. Pre-heat the cooker on a medium flame for 2 to 3 minutes.
2. Keep the greased cake tin on salt and close the lid without gasket and whistle.
3. After 3 minutes, open the cooker lid and pour the cake batter into the pre-heated cake tin placed inside the cooker.
4. Tap the filled cake tin to remove any air bubbles. Keep it on a low flame.
5. Close the lid without gasket and whistle. Let it bake for 40 minutes on a low flame.
6. After 40 minutes, take the lid away from cooker and let it cool.
7. Place the steel plate on the cake tin to cover the cake fully and reverse it and tap.

Note: 
1. I have used hand beater. If you have an electric one, go for it.
2. You can bake the cake in oven if you have one. Pre-heat the oven at 180 degree Celsius for 10 minutes. Bake for 25-30 minutes at 180 degree Celsius. I make it in Prestige potg 9 otg.

Vegetable tawa fry (Phodi)

Vegetable tawa fry is a side dish which is served with the meals. The vegetables such as brinjal, potato, bitter gourd, ridge gourd, spine gourd (cantola), cauliflower, onion, yellow pumpkin, radish, chow chow, mushroom, bread fruit, drumstick, lady's finder, raw banana, ivy gourd are all used to make it. The vegies are sliced as thin as  possible and mixed with red chilly powder, salt and then rolled over the semolina (bombay rawa or the rice flour). Drumstick flowers vada

 Ingredients:  Drumstick flowers: 2-3 cups  Freshly grated coconut: 2 cups  Dry red chillies byadagi: 7-8  Tamarind Salt Rice : 1/2 cup  Preparation:  1. Soak the rice for half an hour. 2. Prepare masala: In a mixi jar, add grated coconut, red chillies, tamarind into a coarse paste. To this add the previously soaked rice and grind it again.  2. Clean the flowers thoroughly.  3. Mix the drumstick flowers and the masala with hands. Add salt. 4. Grease the tava with oil.  Method:  1. Take a ladle full of masala.  2. Make it into small thin dosa. Likewise, put multiple such mini dosas in the whole tava. 3. Add oil on each vada. After 4-5 minutes, turn it over and add oil again. Let it fry on a low flame for about 5 minutes.
