Vegetable tawa fry is a side dish which is served with the meals. The vegetables such as brinjal, potato, bitter gourd, ridge gourd, spine gourd (cantola), cauliflower, onion, yellow pumpkin, radish, chow chow, mushroom, bread fruit, drumstick, lady's finder, raw banana, ivy gourd are all used to make it. The vegies are sliced as thin as possible and mixed with red chilly powder, salt and then rolled over the semolina (bombay rawa or the rice flour). Then shallow fried on tawa.
Mom used to prepare almost everyday during our childhood with variety of vegetables without which the dinner was unimpressive.
Below are the ingredients and steps for brinjal rawa tawa fry -
Ingredients :
Semolina / rice flour - 1/2 cup (1 cup = 200 ml)
Red chilly powder - 1 tsp or can be increased as per taste
Salt - less than 1/4 tsp
Brinjal - 1 big size
Oil (Sunflower oil) or any oil - 4 to 5 tbsp
Preparation :
1. Wash the brinjal thoroughly and pat dry
2. Slice the brinjal to approximately less than half inch thickness. If the circular piece becomes big, then cut into halves.
3. Rinse the brinjal slices in water to avoid those turning into brown / black
4. Keep the semolina in a plate
Method :
1. Mix the rinsed brinjal slices with red chilly powder and salt. (Salt to be added just while ready to be cooked otherwise it leaves water)
2. Roll the slices into the semolina so that the semolina sticks on both the sides of the circular pieces
3. Now, place each piece on hot tawa smeared with oil. Again put oil on each piece and sprinkle water. Keep it covered on a medium flame for almost 4 to 5 minutes.
4. Now it's time to flip the slices (phodis). Add oil if it becomes dry. Let it be uncovered. The flame should now be low to medium and cook for almost 5 to 8 minutes.
The phodis are ready to be served. It's a very good side dish along with rice / sambar or rice / dal.
I suggest to try with varieties of vegetables.
Cauliflower
