Cauliflower - 1 handful cut into pieces
Carrot - 2 cut into long very thin pieces
Cabbage - Longitudinally cut 1 handful
Green peas - 1 handful
Onion - Longitudinally cut 2 med sized
Tomato - 1 small size chopped
Coriander leaves - 1 handful chopped

Other ingredients :
1 cup (200 gm) - Basmati rice or normal sona masuri rice
2 cups (400 ml) water
Salt - 1 tbsp
Ghee - 3 to 4 tbsp
Red chilly powder - 1/4 tsp
Turmeric powder - 1/4 tsp

Preparation :
1. Wash the rice thorourly in running water for 2 - 3 times and soak in drinking water for about half an hour.
2. Dry roast all the ingredients (mentioned under ingredients for pulav powder) in a kadai on a low flame for about a minute / until it leaves aroma.
3. Wash the vegetables and pat dry.
4. Chop the vegetables as needed.
5. Make a paste of ginger, garlic and green chillies in a mortar pastel or a mixer jar.
6. Heat the water and keep aside.

Method :
1. In a pressure cooker vessel, add ghee. Fry the onions well until it turns golden brown. (The rawness of onions should not remain).
2. Add the ginger-garlic-green chilli paste when the onion is half fried, so that it does not leave the rawness here either.
3. Add the pulav powder 1 and half tbsp. Fry well.
4. Add all the vegetables one by one and add tomatoes and give a good stir. Add the coriander leaves.
5. Add the earlier soaked rice (removing all the water used to soak the rice). Mix well with other ingredients added in the vessel. Add salt.
6. Add hot water.
7. Close the lid and put the whistle once it starts to leave steam.
8. One whistle on a high flame and second whistle on a low flame would make the pulav ready. Let the pressure cooker cool down.

Enjoy the vegetable pulav with cucumber raita.
