Cucumber tambli

 Ingredients :

Cucumber - 1 medium size
Fresh grated coconut - 1/2 cup
Green chilli - 2
Cumin seeds - 1/2 tsp
Salt - 1/2 tsp
Jaggery - 1 tsp
Water - 1 cup
Thick Curd - 1 cup

Seasoning :
Oil (Preferably Coconut oil) - 2 tsp
Dry red chilli - 2
Mustard - 1/2 tsp
Urad dal - 1/2 tsp
Curry leaves - 1 


Preparation :
1. Peel the skin of the cucumber.
2. Chop the cucumber into small pieces.
3. Mix the curd well with water and keep aside.


Procedure : 
1. Grind together coconut, green chilli, cumin seeds and salt to a fine paste in a mixer grinder. 
2. Add the chopped cucumber and grind it again.
3. Take the ground masala into a bowl and add the curd and water mix into this ground masala. 
4. Add jaggery and mix well. Add salt, jaggery if needed.
5. Pour the seasoning.

Note: 
1. This is a dish which is popular in Sirsi region where it is served with steamed rice.
2. I have made various varieties of tambli such as Spinach, Lemon.
3. This can be even a cooling drink along with lunch. I personally like it to have as a drink as well as with steamed rice.

Vegetable tawa fry (Phodi)

Vegetable tawa fry is a side dish which is served with the meals. The vegetables such as brinjal, potato, bitter gourd, ridge gourd, spine gourd (cantola), cauliflower, onion, yellow pumpkin, radish, chow chow, mushroom, bread fruit, drumstick, lady's finder, raw banana, ivy gourd are all used to make it. The vegies are sliced as thin as  possible and mixed with red chilly powder, salt and then rolled over the semolina (bombay rawa or the rice flour). Drumstick flowers vada

 Ingredients:  Drumstick flowers: 2-3 cups  Freshly grated coconut: 2 cups  Dry red chillies byadagi: 7-8  Tamarind Salt Rice : 1/2 cup  Preparation:  1. Soak the rice for half an hour. 2. Prepare masala: In a mixi jar, add grated coconut, red chillies, tamarind into a coarse paste. To this add the previously soaked rice and grind it again.  2. Clean the flowers thoroughly.  3. Mix the drumstick flowers and the masala with hands. Add salt. 4. Grease the tava with oil.  Method:  1. Take a ladle full of masala.  2. Make it into small thin dosa. Likewise, put multiple such mini dosas in the whole tava. 3. Add oil on each vada. After 4-5 minutes, turn it over and add oil again. Let it fry on a low flame for about 5 minutes.
